It's obviously too chilly out for ice cream — but that doesn't shorten the lines at Bi-Rite Creamery ever, and, technically, gelato is served warmer than ice cream, making for creamier scoops and providing an excuse to eat it on colder days like this one when it's still very important to eat something sweet and delicious.

So it's good news, then, that Coletta Gelato is open as of yesterday in SoMa. The duo behind Coletta, Antionio and Henri met in Milan while studying food management and, according to their website, "soon decided to attend Gelato University (yes, that’s a real thing!)" Whoa — it checks out! In fact, they appear to have received quite the STEM education, because these two classify their operation as a "gelato lab," where experiments include locally inspired flavors like California pistachio (with Maldon sea salt) and Irish Coffee.

If you can't make it to the shop, they could soon be coming to you: according to Eater Herni and Antonio's Coletta Cruiser, a bike gelato stand, will hit the streets later in the year. Arrivederci then!
