As promised back in July when we last heard October as the timeframe for the debut of Wise Sons Bagel in the Fillmore, I've got an update for you. Tablehopper got a peek inside the space at 1520 Fillmore (at Geary), and she brings word that they're now on track for a December opening.

The bagel spinoff of Wise Sons Deli has been a couple years in the making, and this location came about after the center of the restaurant's bagel making, their commissary kitchen at 22nd and Mission, was shuttered by that January fire. Co-owner and baker Leo Beckerman has been hard at work perfecting his bagel craft, and sellout days seem all but inevitable.

They've successfully moved some of their offsite baking operation to the Fillmore space, where they're currently baking rugelach and such, but the bagel-making has not quite started up again, and they have some electrical issues to resolve, as Tablehopper reports.

As discussed earlier, once open, Wise Sons Bagel will mostly be a retail counter operation with just a few seats up front (like 12), none of which you will likely be able to snag on a weekend. Because, as we've seen before, San Francisco is wildly starved for a good bagel, and they will line up for one. We have a few good ones right now, but Wise Sons' opening is likely to set off a stampede, mark my words.

Also, besides schmears, they plan to have a few other items in a grab-and-go case, including bagel sandwiches, pastrami, and their well loved whitefish salad.
