Come July 1st, foie ban goes into effect. Does this mean that, at least in the state of California, you won't ever again be able to sink your teeth into the cruel yet inescapable butteriness that is foie gras? Probably not. It's most certain to pop up here and there, sprinkled about at clandestine events and whispered venues. But that doesn't mean you shouldn't jump aboard the duck-liver bandwagon. Both Food Gal and Eater recommend checking out the $15 seared foie nigiri on Chaya Brasserie's Au Revoir Foie Gras menu.
Food Gal notes, "It’s got the sweet caramelized flavor of unagi, but is far richer and a million times more luxurious. The floral, nasal-y wasabi gives just the right amount of relief to the palate after all that opulence." So, have at it, folks.
