To celebrate the end of another year — the beloved Mission restaurant's fifteenth, in fact — Delfina commissioned this swell day-in-the-life-of-the-restaurant video. It begins at 4 a.m., with the guy who shows up to hose off the mats that line the kitchen floor and the guy who makes the pasta, and it serves as a reminder of all the many people, the Brussels sprouts that need trimming, the floors that need mopping, the wine that needs tasting, and the organized flurry of small tasks that go into making a well-oiled machine like Delfina run.
