Or, as know in upper-crustease, sweetbreads — crispy sweetbreads, that is. You can find these rich and savory shreds of delight — replete with charred Padron pepper, corn mousseline and buttermilk — at Maverick, located in the sometimes charming Mission District. And if you don't care much for sweetbreads, they have a nifty menu that's ripe for the tasting.
