Former Locanda chef Anthony Strong's upscale delivery-only concept Young Fava, which just debuted less than a month ago serving things like a "90s-Style Crudo" and a full caviar service with house-made potato chips, says he was overwhelmed with the amount of business he was doing in a very short time, and he decided to halt business last night, Monday, July 10, in order to seek out a bigger kitchen to work out of and one that will allow for a few dine-in seats as well.
Strong, who launched Young Fava out of the kitchen at daytime only Vietnamese restaurant Turtle Tower, tells Eater "I made the call before we gained too much momentum. We were just doing crazy amounts of business out of that small space much quicker than I anticipated."
He'll be using the next few weeks (months?) to lock down a different kitchen to use, and hopefully one that will have a few seats but not for any kind of fine dining situation. Young Fava will remain heavily focused on delivery via Caviar, Uber Eats, and possibly other apps. He does tell Eater, though, that he found himself missing the customer interaction.
