You've waited this long for the perfect, paradigmatic bagel to arrive in San Francisco, what's another few months? Originally slated for a December opening, following an earlier delay caused by that big fire in the Mission last January, Wise Sons Bagel (1520 Fillmore at Geary) is delayed again, if only for a short bit. As Hoodline reports, following up with Wise Sons Deli owners Leo Beckerman and Evan Bloom, the space isn't quite ready for daily bagel-sale operations, and we're now looking at February or later.
But! You don't have to wait to test the goods. If you're concerned that hopes are getting raised too high for this new bagel shop, you can taste the very bagels that are already being produced there at Wise Sons Deli's 24th Street and Jewish Museum locations, which are already receiving a regular supply (much like they were pre-fire, in late 2014 and early 2015).
As discussed earlier, the upcoming Fillmore shop is being used a commissary kitchen for all their baking needs, and when it opens for retail sales there will be just a small counter-service area at the front with a grab-and-go case for schmears and whitefish salad, and just a few seats for earlier arrivers.
