In this brief interview done for Epicurious in 2008, the late Judy Rodgers and her Zuni Café partner Gilbert Pilgram (who remains at the restaurant), talk about the food they serve and why they serve it. Ever one of the humblest chefs, despite her wide influence on our national cuisine, Rodgers says, "Virtually everything we do here is connected to some sort of tradition in Italy or France. I've never once thought of myself as having invented a single solitary dish. Everything... the roots are very deep.... I am just sort of the thing through which this food gets made.
