We'll try to write this through he tears of joy streaming down our face and pooling on our laptop. Eater has word that a store devoted solely to the fine art of grilled cheese sandwiches will be opening up in South Park this winter, located a block away from SFist HQ.

The American Grilled Cheese Kitchen is "the brainchild of Heidi Gibson, who is somewhat of a famous and decorated grilled cheese maker," Eater's Paolo Lucchesi explains. "The restaurant will located right on South Park Avenue on the Second Street side (Suite 103, to be exact), [and] will have a beer/wine license."

You maybe didn't READ the article or click the links in it darlin? :) I would call this gourmet grilled cheese with intriguing, carefully paired ingredients for each sandwich, including of course, more than just bread and cheese. Or, just bread and cheese- if you like it like that- but *special* bread and cheese, you see? And some warm soup, a little salad and a beer if you like too. Not just 'your mama's grilled cheese', as good and comforting as that is..
I've visited the test kitchen and tried early versions of the menu. I'm sworn to secrecy on the specific menu items, but let me say that everything is VERY VERY GOOD.
And yes, there will be tomato soup.
at the risk of sending sf foodies out an open window, will there be american cheese slices involved in any of the menu items? i cannot imagine at least ONE sandwich without it.
Please Brock, that's a risk that should be taken a lot more often.
I know that has been discussed but I haven't seen or tried that one yet. I know they have a classic grilled cheese sandwich that uses some really nice cheeses and good bread. I've tried that combo and it satisfies all the standard grilled cheese cravings, but tastes WAY better and doesn't leave you full of weird processed cheese. Nice cheese melts and digests better.
Personally, I'm more excited about the other sandwiches. You can get a Wonder Bread-and-Kraft grilled cheese sandwich at any diner. The American will have some really unique sandwiches.

Yes, yes a thousand times yes. I was looking for good grilled cheese sandwiches on Yelp a few weeks ago and was unimpressed. SO EXCITED.
If someone can open a restaurant that specializes in grilled cheese sandwiches then I know my Crackers and Water restaurant is gonna be a smashing success.

this is good news .. both for the type of food and the fact that it makes the fourth or fifth restaurant opening (announced or actual) over in that neck of SOMA in the past two months. Grilled cheese, paninis, thai food, mexican .... what's next?
There is a new coffee shop called Soberts that opened yesterday. They are giving out free espresso shots now. It's in the alley with Zipcar parking between 2nd and 3rd on King, near where you walk in the median to catch the Muni.

Speaking of restaurant stuff, I guess Mr. Chang of Momofuku restaurant fame is going to be at Sur la table (or however that's spelled out) at the Ferry Building this Saturday, 11am. You can only hope he has some fresh pork buns to hand out ... if not, you can buy his $40 cookbook and attempt your own production.

Seems like there's a lot of these cool interesting little restaurants opening up that make stuff that doesn't require a mortgage to buy lunch....cool.
I've tasted several of their potential menu items. Their grilled cheeses are delectable. Several notches above anything I've had before. They'll have a lot of special offerings, grilled cheese or otherwise. I can't wait for them to open.
The only way it could be better than american cheese on white bread with mayo, 'toasted' in butter.....

Having attended many Grilled Cheese Invitationals both in SF and LA, I can attest to the variety of Grilled Cheese Sandwiches and the culinary expertise of Heidi. She has mastered the art of creative Grilled Cheese.
