Your recipe is a lot better than most other fondue recipes I've seen on the web. And I love fondue! What you should try next time is to add a bit of Raclette (the cheese of course, not the meal) instead of the Appenzeller. In my opinion this is even better than your recipe!

And I need to disagree with you on the point that fondue was ever out of fashion in Europe! We kept partying on, unlike the US...

I love fondue.

Two fondue tips:

(1) Fondue rigs are among the best and most avaialbel thrift store kitchen scores you'll find. The electric fondue/tempura potI scored for $5 at Goodwill served us well through three courses of fondue (cheese --> beef --> chocolate) this new year.

(2) Tossing the grated cheese with cornstarch aids the melt/smoothing process.

Rita,

I'm...I'm just going to pretend you didn't say that, and wish you good fondue. :)

Thanks both of you for your restaurant recs. The East Bay has Fondue Fred's which was a fun place to go on a date in college, but I doubt it has held up to my mental image.

That's so funny - I literally just bought a box of that Safeway fondue cheese blend yesterday! (I'm too lazy to grate the cheese and wait for it to melt. It won't taste nearly as good as Melissa's pictures look, though...)

And on the fondue restaurant recommendations, don't forget Matterhorn on Van Ness and Green if you want someone else to scrape off the melted cheese from the bottom of the pot after you get done eating.

Melt! in Northbeach has cheese fondue. The place is charming, the staff is very friendly, and the crowd is a pretty interesting mix. They have open mic nights on Mondays and Fridays also.
